Why not do it the old fashioned way? It tried, tested an true, even to 1/5 scale cars?

Pop the servo out of the car. Take of the steering horn. Do full left lock, full right lock, full left lock, full right lock, then let it center it self. Put on Horn without moving the gears with the horn pointing straight down. Now it's centered.

Your next problem is the steering slop, but bearing, GPM Knuckles, and a GPM Tie Rod will eliminate that, and your car will track almost perfectly straight. Especially if you lock the front diff.
